In theory, if one graduates Hogwarts, do their stats just stop growing complexly or can you still earn stat points for each year that passes?

I think after your seventh year (maybe adult) you'll stop. There are caps after all.

Details of how the adult system will work have not been released and are still being worked on, as it's still a few years until the first students graduate. There should still be some room for growth, but for what exactly that will look like, we don't know yet.
