I’m so sorry and I promise I’m not trying to be mean or ignorant, but what does that mean? I swear not hating, just curious so I can understand! Does it mean changing genders or changing the gender you’re attracted to or something else completely?

Basically, it's kind of like non-binary, which is where the person isn't male or female, but something out of the gender binary with pronouns including they with it, others like a combo of she or he and I may be wrong about this but even it. Gender fluid is a bit more into it though, being where there is no fixed gender and that it could change from timestamp to timestamp, really.
