To do homework you must first have been on the site for 10 days and have 20 posts. What you see there is just the basics of what is taught in the lessons, the lessons themselves will be found in the report card once it has been unlocked.

OK, so I was looking at the very first Herbology lesson. There were some questions where the answers obviously weren't in the class, but I can't find the answers anywhere else. I mean, I could take a guess at which subjects we will be using gloves, but I feel like there should be a direct answer somewhere...

All of the answers can be found somewhere. I cannot tell you where to look specifically for anything, as you need to do your own research. However, there will be questions that are not always answered in the lessons. You will need to find resources to use.
Regarding the 30 words- I have seen many people do it, and I even did it before I was the professor. Use description. Use what you know about the greenhouses. It is 100% possible. I've seen people write about 50 words for that answer. I assure you, it is possible.
