It's a little strange, but since first years can't transfer money, first years pay by gifting Potato Peelings. You can buy them from the Apothecary. One Potato Peeling costs 1 Knut to buy, and is also sold for 1 Knut, so it's a consistent currency unlike other items, which are sold for less than what it takes to buy.
