Umm , I never quite understood this entirely when I read the Harry Potter books, but if my parents and grandparents are all Muggle-born wizards and witches and my great-grandparents were Muggles, does that mean I'm a Muggle born or something else?

That would make you a half blood, because your parents are magical, even though they were born to Muggles. You are only Muggle-born if both of your parents are non-magical.

Half-blood: at least one parent is magical, but could be Muggles somewhere in your close family.
Pure-blood: both parents are magical, and there are no known Muggles in recent generations.

It means you are Wizard born, as your parents are wizards, while your ancestors are muggles.

You are wizard-boen as muggle-born requires muggle parents, half-blood requires 1 muggle parent, and pureblood requires pure blood parents

Blood status is actually a more social construct. Please read this lore: viewtopic.php?t=30375#p868048

With your explanation, the grandparents are Muggleborn, you're right. But your parents would be halfblood/wizardborn depends on where they are raised. If they're raised with a Muggle influence and live in a Muggle neighbourhood, they would be half-blood. If the influence is very little and they live in a wizarding neighbourhood, they would be wizardborn.

If you choose the parents to be half-blood, you can say your character is a half-blood/wizardborn; again, it depends on the place they're living. But if the parents are wizardborn, your character will always be wizardborn.

IF the Muggle heritage isn't traceable for several generations, your character is pureblood.

Harry Potter had two wizarding parents but was a half blood, that's why I raised this question

Hello! To clarify and add onto Prof. Lesmana's point, half-bloods and wizard-born are defined by mainly cultural differences. For Harry Potter's case, his mother was muggle-born and his father was a pureblood. Harry was raised in the muggle world. That means that he ended up having knowledge of both the muggle and wizarding world, so he is half-blood because of his upbringing. Wizard-born are raised and born into the wizarding world, and they do not live in close contact with muggles or the muggle world. While they may have some knowledge of muggles/muggle culture because of their own partially muggle heritage, they live and were raised in a magical lifestyle, and so they are wizard-born.
