How do people change their nationality? When I signed up, there was only British, Irish, Scottish, or Welsh.

You can owl an Head of House about it, and they should be able to make the change for you.

Hello! I have a question. My character, Aquarius Laven had parents that were wizard born. But then one of her parents had died. And then I remember that if a parent died that was in a wizard born family, it means that the child is a half blood. I just then realized that and I wonder if I could change my character into a half-blood?

Your blood status is determined by the blood status of your parents. Their death has no significance for your genetics. The fact that one or both of your parents have perished does not retrospectively change your blood status. Your father, dead or alive, was a wizard-born as you say, so that's his ancestry, this cannot be changed.

I am confused about the homework. I have gotten my report card and read through my first lesson.

Do you answer the questions in RPG like 'I wrote the answer 'blah blah blah'' 

Or do you do something else. I have found the answers to the questions but just don't know how to set it out. If you could give an example while explaining then that would be really helpful

No, no roleplay. In some homeworks there are tasks that ask you to write a roleplay, but with a pseudonym.
As for the questions, just answer them straight away.
Like, if the question was "What is the incantation for the Levitation Charm?"
You just write the answer down.
