So I know that if you are a regular human than you get one ability every year, but if I don’t get an ability one year does it carry over and I can get 2 the next year, or do I just miss the opportunity to get an ability?

I think you can carry over abilities so if you miss let’s say your year 1 ability you can apply for it in year 2 along with you year 2 ability staff correct me if wrong

You can get an ability for whatever missing ability slot you have if you meet the year requirement for it.
What I mean by that is
If you're a second year and you don't have an ability for either first or second year, you can get an ability for both years.
But.
If you're a second year and you have an ability in first year's slot, you cannot get two abilities, you can get the one for the second year slot.
Additionally, the prerequisites must match. If you're a fourth year and are going to apply for patronus, but don't have any of the other slots from 1-3 filled and want to put patronus down, that won't work. It has to be Y4+.

Everybody has different sizes, but I use 6x2 inch. I suggest you play around with it a bit and see. For the size, inches is the most easiest to use for simplicity
