Use meat drippings with the fat strained out. I know you don't do beef but this applies to chicken and turkey too. If you don't know how to cook meats you can use stock from the store.

So 2 cups drippings (fat strained out) or stock. Grab 2 boullion cubes (for meatier flavor), 4 tablespoons of butter, 1/4 cup all purpose flour, and then herbs. I like onion powder, garlic powder, thyme, sage, rosemary, pepper, salt. Just a pinch of each really. Put all of it in a saucepan, whisk on low heat slowly until it thickens. Takes a few minutes to make.
