Herbology is great and so is Astronomy, honestly I love both IC and OOC so it is hard to say which is the best in my opinion.

Herbology and Charms are my favorites

The rest are all on an equal ground for me. But they are all fun!
Except Transfiguration and Astronomy sometimes can be nightmares...
