Shepherd's Pie
My favorite food is “Shepherd’s Pie”, which is an Irish dish from the 1700’s. You make a Shepherd’s Pie by making a meat mixture with gravy and putting it in a casserole dish, then putting cheesy mash on top before baking it all together. My dad and I like to make our meat mixture with ground lamb, because that’s the “proper way” according to him, but some people use ground beef. Although, he calls that a “Cottage Pie not Shepherd’s Pie”.
I like Shepherd’s Pie because every bite has meat, gravy, and mash. There’s also vegetables in the meat mixture. We use peas and carrots, but I know a lot of people also use a celery stalk. I don’t like celery, though, so we don’t use that. Maybe that means ours isn’t a “proper” Shepherd’s Pie, too, but it’s really tasty so I don’t care all that much.
Shepherd's Pie Recipe
Ingredients
- 500 g lamb(ground)
- 350 ml chicken stock
- 1 kg mashed potatoes
- 1 stalk celery (we omit this)
- 1 carrot
- 60 g peas (we use frozen)
- 1 onion
- 1 clove garlic
- 1 tbsp tomato paste
- 2 sprigs thyme
- 2 tbsp flour
- 30 g parmesan cheese (grated)
- Salt and Pepper
- Olive oil for frying
Directions
- Preheat over to 200 degrees Celsius
- Finely chop onion, garlic, and thyme leaves. Peel and fine dice carrot. Fine dice celery.
- Heat olive oil and sear ground lamb, breaking it up with a cooking spoon (about 2 min). Add onion, garlic, thyme, carrots, peas, and celery. Fry for 5 to 8 minutes. Season with salt and pepper.
- Add tomato paste and fry for 1 to 2 min, until cooked down. Add flour and stir constantly for about 2 to 3 minutes.
- Add chicken stock and simmer over medium heat for about 10 to 12 minutes.
- Place meat into large ovenproof baking dish and spread mashed potatoes evenly on top.
- Top with parmesan and bake in preheated oven for 20 to 25 minutes, until golden.
