I can't help but salivate as I think about pumpkin pie. It's my absolute favourite dessert, and I could go on and on about how delicious it is. The perfect pumpkin pie is a work of art, with a crispy, buttery crust that melts in your mouth and a filling that's rich and creamy. What really sets pumpkin pie apart, though, are the spices. Cinnamon, nutmeg, and cloves blend together in a symphony of flavour that's warm, comforting, and oh-so-delicious. Just a whiff of the fragrant spices and I'm transported to my grandma's kitchen, where she used to bake her famous pumpkin pie every Saturday. And let's not forget about the texture. Pumpkin pie is the epitome of creamy, with a luscious filling that's just the right amount of sweetness. It's not too heavy, yet still has enough substance to satisfy my sweet tooth cravings. To cook the pumpkin, put it into a large saucepan, add water, and bring it to a boil. Once boiling, put a lid on the saucepan and let it simmer for around 15 minutes, or until the pumpkin is soft. After that, drain the pumpkin and allow it to cool. Preheat your oven to 180C. Roll out the pastry on a floured surface and use it to line a tart tin with a 22cm diameter and a loose bottom. Chill the pastry in the tin for 15 minutes. Next, line the pastry with baking parchment and baking beans, and bake it for 15 minutes. After that, remove the beans and paper, and bake it for an additional 10 minutes until the base becomes pale golden and biscuity. Finally, take the tin out of the oven and let it cool for a bit. Preheat your oven to 220C. Take the cooled pumpkin and pass it through a sieve into a big bowl. In another bowl, mix together the sugar, salt, nutmeg, and half of the cinnamon. Add the beaten eggs, melted butter, and milk to the bowl and stir everything together. Combine this mixture with the pumpkin purée, and mix it well. Pour the mixture into the tart shell and bake it for 10 minutes. After that, reduce the oven temperature to 180C and continue baking for 35-40 minutes, or until the filling has just been set. After baking, let the pie cool down before taking it out of the tin. Mix the icing sugar with the remaining cinnamon, and sprinkle it over the pie. Finally, chill the pie before serving.
