Mom’s Real Meatballs and Spaghetti Mom adds a bit of warm water to keep these meatballs exceptionally moist. They are cooked in a red wine and tomato sauce and are the perfect accompaniment to a mound of spaghetti. recipe credit

Ingredients:
1/2 pound ground veal
1/2 pound ground pork
1 pound ground beef
1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil
For the sauce:
1 tablespoon good olive oil
1 cup chopped yellow onion (1 onion)
1 1/2 teaspoons minced garlic
1/2 cup good red wine, such as Chianti
1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
For serving:
1 1/2 pounds spaghetti, cooked according to package directions
Freshly grated Parmesan

Instructions
Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.
Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

Lately, Charlie has been seen staring at a particular girl, Bailey Glade. A third year she met about a month after arriving at Hogwarts. Whether she actually likes her is unknown. Bailey is known for her crush on a second year, name Kim. They haven’t started dating, so if Charlie actually likes her, she still has a chance.

Charlie is very confused about her feelings, because before the party, she always knew she liked boys. Especially since she had a crush on a fellow dhapmir, Simon Kincaid. Also a third year. Deep down, when she found out that Simon and AngelFrye were dating.

So, is Charlie Gay?

Hmm… a good joke? I wasn’t really one to try and be funny, but occasionally the right moment would pop up. I had one go to joke, that I would tell to everyone. Mum had heard it at least one thousand times.

“Who’s there?”

“MOO!” Get it? Am interrupting cow, interrupting your sentence!

4. Write a post about feelings with no dialogue (under 1000 words, over 200 words)

Ava had been gone for like- four days. I was so dang mad at myself. During the time I learned of the news, I felt every single negative emotion in about an hour. Angry, sad, depressed, lonely. Those were just a few. All mixing up inside of me like paint, trying to make a beautiful color, but just making brown. I was basically forced to just stuff it down and try and do my classes, but it was so dang hard. I had no answers to all of the questions I had been asking myself. Most of them were just simple, one word questions. Well actually just one word. Why? Why? Why?

I knew I needed to write to Ava. But it was not the time. She had done something- well attempted to do something wrong. Plus, if I tried to send her a letter it would be full of demanding questions all along the lines of why?

Today, I was going to relieve myself of the why why why-ness. In the common room, I found a set of paints and a blank canvas. The paints had been sitting there for… a very long time. Since before break. I was going to paint my sorrows away.

I was not an artist. Of course, as a kid I finger painted but this was very different. I got set up, and began slathering my emotions on that strip of canvas stretched on some wood. Colors like red and dark orange represented all of the pain and hurt that was bottled up in me. Blue represented the sad and depressed feelings I felt. It was mostly red. And brown. Which was this huge indescribable emotion. Something you couldn’t find the right word for.

After I was done, I packed up the paints, and admired the painting. It wasn’t much, but it made me feel… better. WC: 314

5. Write a solo with your character trying something new (under 1000 words, over 200 words)

It was the weekend. I was all caught up in my schoolwork, so it was time for some fun. Today I would be sneaking into Hogsmade. It wasn’t even that far into the school year and I was already doing this. This seemed like something that I would do with my best friend Ava, but I wanted to explore first, and maybe, just maybe impress her.

Putting on my most grown up clothes, which turned out to be a sweater that I found fairly ugly, and a pair of dark jeans that I did not think went together, but my mum though otherwise. Also, I actually did my hair, which normally was just brushed, but this time I tied it back in a somewhat high ponytail.

Walking down to the gates along with all of the other third plus years, I kept my cool, knowing that I would get in. Well, I was slightly concerned that the fake form would get me caught and placed in detention, but actually I had made it through. Awesome.

I was in. Time to explore.

Starting with Zonkos, and working my way around probably ending in a stop at the three broomsticks for a butterbeer, before heading back to the castle. The possibilities were endless. Well, sorta endless.

It was time for the girls to put their skills to action. Emma, Molly and Maddy had been training for this all of their lives. The heist to save the giant pearl would begin tonight.

Maddy was stationed Bach home with all of her equipment, and had already hacked into the system, and disabled the cameras. Emma and Molly were dressed in their best dresses, and arriving at the mansion in style, in a limo.

The girls entered the party, and went right for the closet. They changed into the clothes they had brought, that matched the waitresses. The only downside to that was the high heals. The girls snuck their way into the room where the pearl was. They were ready. Maddy did her best, and shut off each laser one at a time. It was tricky, but the girls made it to the pearl. They did the signature swap. Molly held that pearl tight, and they made it out. The girls were heading down the stairs when disaster struck. The pearl had slipped out of Molly’s hands.

I hadn’t been on the ice since break, and it was time. I grabbed an empty duffle bag that was sitting in my trunk. My skates were placed inside, along with my stick. And three pucks. I couldn’t loose them, because well they were all I had. I changed in to a hoodie and my jersey. And sweatpants. There was nothing more comfortable… right? I threw on my tennis shoes, and checked that I had stick tape and hockey gloves. When I had everything, I went down to the lake.

I went down, close but not too close. I swapped into my skates. And made sure the ice was alright. It looked fine, and wasn’t cracking or creaking when I put some weight on it, so I went for it with the pucks in my pocket and stick in hand. I was so glad to be here. I started with some simple skating exercises, just to warm up. I wanted to be super warmed up. It was too bad that Simon wasn’t here. He would make a great skating partner. And drill partner.

I continued to skate, and do drills, for a long time. I breathed heavier and heavier, wondering why. But I was out of shape. Really out of shape. I had been in such good shape before hogwarts, but not skating for a while took a toll on me. I hadn’t skated for awhile anyway. And the two times I went, I was just teaching someone. Not actually working out.

I stopped because of how tired I was. I was going to play in the summer, and teach a kids class. I need to be in shape for that. I knew one thing for sure, I would be out on the ice many other times this year.

Sometimes. Just sometimes. You crave something. Lately, it’s been my mums brownies. They are delicious. And there is no debate about that. The brownies are rich, fudgey, soft in the middle with a crispy top and edges. Exactly everything you want in a brownie.

I have tried to make this delicious recipe once, and I though I had it, but I didn’t. Mum was gone with Eliza, and I was home alone. I pulled out the recipe sheet, and found all of the ingredients. I mixed and mixed, trying to go super speed, so they would be ready when mum got home. I popped them in the oven… and forty minutes later, when I took the out, they looked horrible. I checked back on the recipe, wondering what I had done wrong. And of course, I had forgotten the flour.

Ingredients
1 1/2 cups granulated sugar*
3/4 cup all-purpose flour
2/3 cup cocoa powder, sifted if lumpy
1/2 cup powdered sugar, sifted if lumpy
1/2 cup dark chocolate chips
3/4 teaspoons sea salt
2 large eggs
1/2 cup canola oil or extra-virgin olive oil**
2 tablespoons water
1/2 teaspoon vanilla
Instructions
Preheat the oven to 325°F. Lightly spray an 8x8 baking dish (not a 9x9 dish or your brownies will overcook) with cooking spray and line it with parchment paper. Spray the parchment paper.
In a medium bowl, combine the sugar, flour, cocoa powder, powdered sugar, chocolate chips, and salt.
In a large bowl, whisk together the eggs, olive oil, water, and vanilla.
Sprinkle the dry mix over the wet mix and stir until just combined.
Pour the batter into the prepared pan (it'll be thick - that's ok) and use a spatula to smooth the top. Bake for 40 to 48 minutes, or until a toothpick comes out with only a few crumbs attached (note: it's better to pull the brownies out early than to leave them in too long). Cool completely before slicing.*** Store in an airtight container at room temperature for up to 3 days. These also freeze well!

When taking this pink and purple potion, you will feel drowsy enough that soon you fall asleep. Now, you will have dreams that are entirely happy. Rainbows and unicorns, puppies and only happy thoughts. This potion causes you to sleep for at least eight hours, but can last longer.

FOR THE BROWNIE BATTER
1/2 cup unsalted butter melted(113g)
¾ cup semisweet chocolate chips or roughly chopped chocolate
1/2 cup granulated sugar (100g)
1/2 cup packed light brown sugar (100g)
⅓ cup cocoa powder (35g)
1 teaspoon vanilla extract (5ml)
½ teaspoon salt
2 large eggs
1/2 cup all-purpose flour (65g)
FOR THE COOKIE DOUGH
1/2 cup unsalted butter room temperature (113g)
1/2 cup granulated sugar (100g)
1/4 cup packed light brown sugar (50g)
1 teaspoon vanilla extract
1 large egg
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 1/3 cups all-purpose flour (160g)
1 cup semi-sweet chocolate chips
Instructions
Line a 9x13 baking dish with parchment or foil and heat oven to 350F.
For the brownies melt butter then stir in cocoa powder. Whisk in both sugar and the salt then add the eggs and vanilla and beat well (secret to glossy brownies is to beat the eggs and sugar very well.)
Add the flour and mix until almost combined then fold in the chocolate chips and finish the batter off by hand with a spatula scraping the bowl down and mixing in any errant flour etc.
Transfer the brownie batter to your prepared pan and spread into a thin layer then set aside.
For the cookie dough
Cream the butter, and sugars on high for 3-4 minutes or until light and fluffy, scraping the bowl down as needed.
Mix in the vanilla and egg and scrape the bowl down once more.
Add salt baking soda and powder then mix until combined.
Pour in the flour and mix until almost combined then fold in the chocolate chips, reserving a handful to sprinkle on top later. Finish mixing the batter with your spatula then drop spoonfuls onto the brownie batter. You don't need full coverage, it will be nice to see the brownie batter peaking through after baking.
Cover with foil and bake at 350F for 20 min then bake another 20 min uncovered. Allow to cool before removing from pan and cutting.
