To answer your first question. You have to buy a pet. You can save up to buy one in the shop Magical Menagerie There are various animals you can choose from.
Regarding your second question- sign-ups are usually in your common room. Find the Gryffindor common room and sign up there. Unfortunately, since I am a different house to you- I cannot provide you with a link.
Similar to quidditch sign-ups, duelling sign-ups are also in your common room. Check the pinned posts. Bear in mind that in order to be accepted to the waiting list, you must have at least 2 Dueling Spells in your trunk and at least one attack spell.
Feel free to shoot me any other questions you have! I'm happy to help. If you want, you can also get help from the prefects and professors - they will be happy to aid you where you are feeling a bit lost.
