For Writer, you have to be a writer in the Hogwarts Headliner!

how does one put their ency in their signature

You would copy the link from the search bar and attach it by using the [url.][/url] code (without the period in the brackets) around the word you wish to be the link to your ency.
To go to your signature, you need to click "Edit Profile" and find the Signature tab in the drop down menu.

The profile card is typically known as a source of truth, especially relating to things like blood status, but if my character has a nickname that he has been called his entire life and commonly goes by, would it be okay for that to be his registered name? Or would I have to register him under what his actual name is?
