There is more than one way to say goodbye in Japanese depending on how familiar you are with a person!

じゃあね (Jaa ne) is saying goodbye to a friend or someone you know! It's also for short term like if you expect to see them again soon!

さようなら (Sayōnara) is what people think of when they think of goodbye but it's actually more formal and meant as like a "I don't know when I will see you again" kind of thing!

People think Ni Hao Ma is how are you in mandarin but we usually say 你今天怎么样？which you can roughly pronounce as ni jing tyen zun mer young ?
